National Ice Cream Day: Coconut-Peach Almond Ice Cream Recipe

You scream, I scream, we all scream for peach ice cream!

This past Sunday was National Ice Cream Day (yum!) and what better way to celebrate than home made ice cream! Peaches have always been one of my favourite fruits in the summer, I don’t know what it is about them (and watermelon) but they just scream summer to me… so I decided to make some peach ice cream!

One of my go-to’s whenever I make ice cream is coconut milk. It’s rich and creamy but wayyyy healthier than using heavy cream, and it tastes great too! I find that I also can use less ingredients when I use coconut milk, so recipes end up being really simple. It creates the creamiest, most delicious ice cream; it’s a win-win situation, am I right?

For this recipe I used my ice cream maker, the Cuisinart Pure Indulgence 2-quart Frozen Yogurt Ice Cream and Sorbet Maker. I LOVE this thing. We actually got it using our Airmiles rewards, and I’ve never had any problems with it. Seriously, its great!

For those of you who don’t have an ice cream maker, there are plenty of methods out there for making ice cream without one… just might be a little more time consuming and laborious. (Side note: we used to have an ice cream maker that required being churned by hand. It was the worst, but it got the job done.)

Ingredients
  1. Two 14 oz. cans of coconut milk
  2. 1/2 cup honey
  3. 1 teaspoon vanilla extract
  4. 2 cups frozen peaches
  5. 1/4 cup blanched almonds, sliced
Instructions
  1. In a large blender, combine coconut milk, honey, peaches and vanilla extract.
  2. Following your ice cream machine’s directions, pour the mix into the machine.
  3. Just before the ice cream is done (my machine takes about 20 minutes) add in the almonds.
  4. Serve with freshly sliced peaches!
