It’s that time of year again – aka eat everything pepperminty, chocolatey and bad for you. I thought I would share an oldie but a goodie today – one of my favourite holiday recipes! My gluten-free peppermint chocolate chip cookies!
I have no idea where December went. Seriously, how is Christmas less than ten days away?!?! I thought it was time for me to share another one of my festive recipes! Eating biscotti with a latte or hot chocolate is one of my favourite things to do during the winter. But, the gluten-free biscotti you can get at the grocery store can be pretty steep, so decided to make my own. Biscotti is actually one of the few things that gluten free flour works really well for since the flour is naturally a little dryer and doesn’t hold moisture well.
I’ve been pretty absent from here lately, but I’m back! I’m in my final year of my program, and since my program is a condensed/accelerated one I’m definitely feeling the heat. When I do have some spare time, I have been spending it with Matt, my family, pups and baking of course!
Pumpkin is definitely one of my favourite flavours of fall. I love it all; pumpkin pie, lattes, ice cream, grilled pumpkin, you name it! Another one of my favourite treats has always been banana bread, so I decided to try and combine the two! The results: Ah-mazing.

This past Sunday was National Ice Cream Day (yum!) and what better way to celebrate than home made ice cream! Peaches have always been one of my favourite fruits in the summer, I don’t know what it is about them (and watermelon) but they just scream summer to me… so I decided to make some peach ice cream!
